'1. Be sure you have a good, sharp knife and a flat, stable surface,' with a knife depicted next to the instructions.
'2. If you're right-handed, grasp the fish head by the gill plate with your left hand,' showing a hand holding the fish while a knife is positioned under the fin near the gill plate.
'3. Push the knife through the flesh parallel to the bones. Pull with your left hand on the head to provide additional force,' with a visual of a fillet being removed from the fish.
'4. Flip the fish over and repeat. Remove any pin bones with tweezers, or don't—they remove easily when the fish is cooked,' accompanied by illustrations of fillets and pin bones.
'5. Trim any excess fat, bloodline, skin, etc. For smaller fish (like trout), keep as whole fillets and cook with the skin on. For larger fish, portion into fist-sized pieces,' showing trimmed fillets and knife options.

'Live Free, Eat Well' is a cookbook by Adam Glick, published by DK Publishing/Penguin Random House. We drew inspiration from retro boy scout manuals and explorer's sketchbooks.

Live Free, Eat Well is packed with Adam’s innovative recipes and techniques for campfire cooking. He’s an incredibly innovative chef who’s surfed, sailed, camped, and roadtripped all around the world, all while eating amazing food! I learned a lot and worked up a serious appetite while working on this project. It was a joy to bring his concepts to life.
